My son, being a picky eater, absolutely loved this. I ended up with leftovers for a couple nights.

Crock Pot Chicken Tacos

Serves 4

Ingredients

  • 4 Boneless Skinless Chicken Breasts (Mine were just a little defrosted. Not much)
  • 1 packet Packet Taco Seasoning (I used my own taco seasoning. If you make your own I used 3 tbsp)
  • 1 jar Jar Salsa (I used mild - Paul Newmans)
  • Tortillas
  • Toppings

Directions

Step 1
Put your Chicken Breasts in your Crock Pot, pour the Taco Seasoning over the Chicken Breasts. Then pour the Mild Salsa on top. Set Crock Pot on Low and cook for 4-6 hours. (My crockpot doesn't have low 4 - 6 hours, so I did low for 8 hours and it came out perfect) You should be able to shred the Chicken apart with a fork. Put some Chicken in a Tortilla and top with whatever you wish.

Slow Cooker Golden Chicken with Noodles

Ingredients

  • 2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon-style mustard
  • 1 1/2 teaspoon garlic powder
  • 8 large carrots, thickly sliced (about 6 cups)
  • 8 skinless, boneless chicken breast halves (about 2 pounds)
  • 4 cups egg noodles, cooked and drained
  • Chopped fresh parsley

Directions

Step 1
Stir the soup, water, lemon juice, mustard, garlic powder and carrots in a 3 1/2-quart slow cooker. Add the chicken and turn to coat.
Step 2
Cover and cook on LOW for 7 to 8 hours or until the chicken is cooked through. Serve with the noodles. Sprinkle with the parsley.

This was really good. I put the zucchini in my food processor. My son didn’t know there was zucchini in it.

Skinny Zucchini Ziti

Ingredients

  • 1 1-lb., 7.8-oz. jar marinara sauce
  • 3 cups penne shells, whole grain, dry
  • 2 cups fat free cottage cheese
  • 2 cups skim mozzarella cheese, shredded
  • 1 large zucchini, sliced into 1/4-inch pieces
  • 1 tablespoon fresh oregano, finely chopped
  • 1 tablespoon fresh basil, finely chopped
  • 1 teaspoon black pepper

Directions

Step 1
In a large mixing bowl, combine cottage cheese, mozzarella, oregano, basil, and black pepper.
In the slow cooker, spoon 1/4 of marinara sauce onto the bottom, add 1 cup penne shells, 1/3 of zucchini slices and top with 1 cup cheese mixture. Repeat until you have three layers. Top with the remaining marinara and lastly, cheese. Note: Keep penne shells and cheese away from the edges by about 1 inch. Pasta tends to get hard and cheese burns if allowed to touch the sides while cooking.
Step 2
Cover and cook on low for approximately 2 hours or until penne noodles are al dente Not all slow cookers cook the same, so be sure that the penne is done before serving. Allow to cool for 15 minutes before serving.

Slow Cooker Lemon Garlic Chicken

Ingredients

  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2lb skinless, boneless chicken breast halves
  • 2 tablespoons butter
  • 1/4 cup water
  • 3 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon chicken bouillon granules
  • 1 teaspoon chopped fresh parsley
  • 8oz cream cheese

Directions

Step 1
In a bowl, mix the oregano, salt, and pepper. Rub the mixture into chicken. Melt the butter in a skillet over medium heat. Brown chicken in butter for 3 to 5 minutes on each side. Place chicken in a slow cooker.
Step 2
In the same skillet, mix the water, lemon juice, garlic, and bouillon. Bring the mixture to boil. Pour over the chicken in the slow cooker.
Step 3
Cover, and cook on High for 3 hours, or Low for 6 hours. Add the parsley to the slow cooker 15 to 30 minutes before the end of the cook time.
Step 4
About 15 minutes before you're ready to serve, remove the chicken and place on a serving platter. Add the cream to cheese to the juice in the crockpot, and whisk until smooth.
Step 5
Ladle the sauce over rice or pasta, then place your chicken on top!
