Since school sports are starting, crockpot meals are a life saver. This recipe has a really good taste, but I will never use bone-in pork chops again. The bone fell right off the pork chops and ended up with little shards in the gravy. So no leftovers.  Next time I’ll either do a boneless pork chop or a pork shoulder. I made rice to go with the meal and a veggie.

Crock Pot Smothered Pork Chops

Serves 4

Ingredients

  • 4 boneless pork chops (I tried bone-in, it ended up falling apart resulting in tiny bones in the gravy)
  • 1 packet onion soup mix
  • 1 can chicken broth, low sodium
  • 1 can cream of chicken soup, low sodium
  • 1 packet dry pork gravy mix
  • 1 teaspoon garlic powder

To Thicken Gravy

  • 3 tablespoons corn starch
  • 3 tablespoons cold water

Directions

Step 1
In a 5-6 quart oval slow cooker, combine onion soup mix, chicken broth, cream of chicken soup and pork gravy mix.
Step 2
Whisk together until combined.
Step 3
Season both sides of the chops with a little bit of garlic powder.
Step 4
Place pork chops into the slow cooker.
Step 5
Cover and cook on low about 4-6 hours.
Step 6
Just before the pork chops are done - whisk together the corn starch and cold water in a small bowl. Once it is smooth, pour it in with your pork chops in the slow cooker and stir gently.
Step 7
Cover and switch the slow cooker to high and cook for another 30 minutes (until gravy has thickened.)

My son being a picky eater, he does love Chicken & Dumplings. Me being busy, loves my Slow Cooker. I came across this recipe on Pinterest and figured I’d give it a try. I did tweek it a little. I didn’t add the season salt and I added a bag of baby carrots under the chicken. All I have to say is yum! This is definitely a keeper.


Easy Slow Cooker Chicken & Dumplings

Ingredients
  • 2 pounds boneless, skinless chicken breasts
  • 1 medium onion, chopped
  • 2 tablespoon butter
  • 2 tsp dried parsley
  • ¼ tsp poultry seasoning
  • ¼ tsp garlic powder
  • 2 cups chicken broth
  • 2 cans cream of chicken soup
  • 1 pound baby carrots
  • 10 canned, regular size, buttermilk biscuits
Instructions
  1. Place chicken in the bottom of slow cooker, along with chopped onion and 2 TB butter. Sprinkle with dried parsley, seasoning salt, poultry seasoning, and garlic powder.
  2. Add baby carrots, chicken broth, and cream of chicken soup to crockpot, and stir all ingredients to combine. Place lid on top and cook over low heat for 6-8 hours, or high heat for 4-5 hours.
  3. After cooking for at least 6 hours on low, or 4 hours on high, remove lid and stir mixture with a spoon or fork, breaking apart the chicken into smaller chunks.
  4. Chop the biscuits into quarters and add to the crockpot. Push biscuit dough down into the crockpot a bit so that they will absorb the gravy as they cook.
  5. Replace the lid and continue cooking for 1 more hour over high heat until biscuits are cooked through and begin to turn golden brown.

Crock Pot Chicken Tacos

Serves 4

Ingredients

  • 4 Boneless Skinless Chicken Breasts (Mine were just a little defrosted. Not much)
  • 1 packet Packet Taco Seasoning (I used my own taco seasoning. If you make your own I used 3 tbsp)
  • 1 jar Jar Salsa (I used mild - Paul Newmans)
  • Tortillas
  • Toppings

Directions

Step 1
Put your Chicken Breasts in your Crock Pot, pour the Taco Seasoning over the Chicken Breasts. Then pour the Mild Salsa on top. Set Crock Pot on Low and cook for 4-6 hours. (My crockpot doesn't have low 4 - 6 hours, so I did low for 8 hours and it came out perfect) You should be able to shred the Chicken apart with a fork. Put some Chicken in a Tortilla and top with whatever you wish.

Slow Cooker Golden Chicken with Noodles

Ingredients

  • 2 cans (10 3/4 ounces each) Campbell's® Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1/2 cup water
  • 1/4 cup lemon juice
  • 1 tablespoon Dijon-style mustard
  • 1 1/2 teaspoon garlic powder
  • 8 Large carrots, thickly sliced (about 6 cups)
  • 8 skinless, boneless chicken breast halves (about 2 pounds)
  • 4 cups egg noodles, cooked and drained
  • Chopped fresh parsley

Directions

Step 1
Stir the soup, water, lemon juice, mustard, garlic powder and carrots in a 3 1/2-quart slow cooker. Add the chicken and turn to coat.
Step 2
Cover and cook on LOW for 7 to 8 hours or until the chicken is cooked through. Serve with the noodles. Sprinkle with the parsley.
