Since fruit is coming into season, don’t throw away bruised or soft fruit. Bake it. I know I freeze my banana’s to make banana breads. I’ll be compiling a list of fruit recipes. If you have any, let me know.

Chocolate Crack Cake April 9, 2013

I made this for Easter, I have to warn you. Only eat small pieces. It also tastes better the next day. I also topped it off with some vanilla ice cream.

Chocolate Crack Cake

Cook time 55 minutes
Meal type Dessert

Ingredients

  • 1 box Chocolate Cake Mix
  • 16oz Sour Cream
  • 1 box Chocolate Pudding Mix (5.9 oz)
  • 3/4 cups oil
  • 1/2 cup warm water
  • 4 eggs (beaten)
  • 2 1/2 cups semi sweet chocolate chips

Directions

Step 1
Heat oven to 350.
Step 2
Mix together everything in a large mixing bowl (stir in chocolate chips last).
Step 3
Spray a bundt pan with cooking spray.
Step 4
Pour batter into bundt pan and cook for 50-55 minutes.
 

Crockpot Chicken Tacos April 9, 2013

My son, being a picky eater, absolutely loved this. I ended up with leftovers for a couple nights.

Crock Pot Chicken Tacos

Serves 4
Cook time 8 hours
Meal type Main Dish

Ingredients

  • 4 Boneless Skinless Chicken Breasts (Mine were just a little defrosted. Not much)
  • 1 packet Packet Taco Seasoning (I used my own taco seasoning. If you make your own I used 3 tbsp)
  • 1 jar Jar Salsa (I used mild - Paul Newmans)
  • Tortillas
  • Toppings

Directions

Step 1
Put your Chicken Breasts in your Crock Pot, pour the Taco Seasoning over the Chicken Breasts. Then pour the Mild Salsa on top. Set Crock Pot on Low and cook for 4-6 hours. (My crockpot doesn't have low 4 - 6 hours, so I did low for 8 hours and it came out perfect) You should be able to shred the Chicken apart with a fork. Put some Chicken in a Tortilla and top with whatever you wish.
